Sauteed mushrooms

A very simple but equally tasty side dish, perfect to be paired with a main course of meat or as a condiment for polenta or on a nice bruschetta.

Ingredients:

    • 800 g of mixed mushrooms (porcini, field mushrooms, chanterelles, etc.)
    • 1 clove of garlic
    • Extra virgin olive oil to taste
    • Parsley to taste

Preparation :

    1. Thoroughly clean the mushrooms and cut them into thin slices.
    2. Brown the garlic clove in a pan with some oil.
    3. Put the porcini mushrooms in the pan with oil and garlic and cook for a couple of minutes before adding the rest of the mushrooms.
    4. Continue to cook for a few minutes over high heat, adding salt and pepper and mix always very carefully so as not to flake the mushrooms during cooking.
    5. When cooked, add the chopped parsley and remove the mushrooms from the heat.
