Gratinated Porcini Heads

A tasty and delicious side dish at the same time, very easy to prepare and excellent to savor at lunches with family and friends, perhaps combined with a meat stew or kebabs.

Ingredients:

    • 8 beautiful large porcini mushrooms
    • 2 tablespoons of breadcrumbs
    • 1 tablespoon of grated Parmesan cheese
    • 1 clove of garlic
    • 4 tablespoons of extra virgin olive oil
    • Parsley to taste
    • Salt and pepper to taste

Preparation :

    1. Carefully clean the mushrooms: separate the stems and set them aside, with a damp cloth clean all parts of the porcino (avoid putting the hairpins in water because the mushrooms are very porous and absorbing the water they would become mushy) / li>
    2. Chop the stems of the porcini mushrooms with the parsley and garlic in a blender.
    3. Transfer the mince to a bowl, add the grated bread and grated Parmesan cheese, 2 tablespoons of oil, salt and pepper to taste and mix everything together.
    4. On an oiled baking dish, place the mushroom heads with the concave side up and fill it with the mixture just made.
    5. Pour a drizzle of oil over the mushrooms and bake in a preheated oven at 180 ° C for 15 minutes.
    6. After 15 minutes, turn on the grill and cook for another 3-5 minutes, being careful not to burn them.
    7. Serve still hot.
