Gratinated Porcini Heads
A tasty and delicious side dish at the same time, very easy to prepare and excellent to savor at lunches with family and friends, perhaps combined with a meat stew or kebabs.
Ingredients:

- 8 beautiful large porcini mushrooms
- 2 tablespoons of breadcrumbs
- 1 tablespoon of grated Parmesan cheese
- 1 clove of garlic
- 4 tablespoons of extra virgin olive oil
- Parsley to taste
- Salt and pepper to taste

Preparation :

- Carefully clean the mushrooms: separate the stems and set them aside, with a damp cloth clean all parts of the porcino (avoid putting the hairpins in water because the mushrooms are very porous and absorbing the water they would become mushy) / li>
- Chop the stems of the porcini mushrooms with the parsley and garlic in a blender.
- Transfer the mince to a bowl, add the grated bread and grated Parmesan cheese, 2 tablespoons of oil, salt and pepper to taste and mix everything together.
- On an oiled baking dish, place the mushroom heads with the concave side up and fill it with the mixture just made.
- Pour a drizzle of oil over the mushrooms and bake in a preheated oven at 180 ° C for 15 minutes.
- After 15 minutes, turn on the grill and cook for another 3-5 minutes, being careful not to burn them.
- Serve still hot.
